Palatinate Zwiebelkuchen (onion cake)

In autumn, few days after the first vintage, the palatinates become anxious. The "new wine" is here – in other it is called the Federweißer, Bitzler or Suser. Every gastronomy and winegrower has this wine. It is extremely tasty with warm onion cake. You can only enjoy the new wine for several weeks, therefore, you will smell the onion cake in winegrowers' alleys for weeks.

Here is the recipe: put flaky pastry on the baking pan. Steam 700 gr. onion rings and 200 gr. smoked ham cubes in a pot. Smear this mass on the flaky pastry. Flavour with pepper, caraway and nutmeg. Be careful with salt! The ham is salty, if you have not blanched it in boiling water. Put the cake into the preheated oven and, just before it is ready, spread 1/2 litre sweet cream whisked with 4-5 eggs on top of the cake. Bake until the mass is brownish. Serve warm! By the way, at the table you can say "Prosit" instead of "Bon Appetite"...
