Trout with Riesling

Smear the baking pan with butter and put 1 chopped spring onion into it. Add salt and pepper. Clean the trout and smear it with lemon juice. Put it into the baking pan and dredge it with onion pieces, salt and pepper. Cook 1/4 litre Riesling with cream and, when it is hot, pour it on the trout. Add 125 gr. mushrooms. Put the trout for 10-15 minuntes into the preheated oven. Take the trout out and keep it warm. Thicken the sauce and add 1 spoon fresh butter. Serve it with Riesling.
