Palatinate Fläsch-Knepp

These round delicacies are part of Palatinate feasts. There are villages, in which all 250 inhabitants eat up about 6-8 "Fläsch-Knepp"s with horseradish sauce on every Sunday. Of course, these meat balls taste in every family differently, and every child is sure that his mother's are the best of the world.

Press veal, pork and beef, as well as soaked and pressed buns through the pressing machine twice. Add 2 eggs with salt, pepper, nutmeg, clove (or caraway), thyme (or marjoram) and hacked parsley. Let the mixture rest for a while. Form balls with wet hands and cook them in a salted meat broth. Fresh grated horseradish belongs to this meal. You can eat the meat balls with the broth as a soup or with mashed potatoes. Many prefer the meat balls also with sauerkraut and wine.
